8 oz butter softened
2 1/3 c. AP flour
1 1/2 tsp baking powder
1/2 tsp salt
1 3/4 c. sugar
2 tsp lime zest
6 oz cream cheese
4 eggs + 1 yolk
2 1/2 c. blueberries
Glaze:
4 oz powdered sugar
2 TBS lime juice
Combine butter and sugar in a mixer with a paddle and mix until well incorporated and butter is soft. Next add cream cheese and mix. Then add eggs and yolk one at a time. Mix fully. Add lime zest, salt, baking powder and slowly add flour until well blended. Finally add blueberries. Spray desired baking dish pour batter in and bake until outside in lightly brown at 350 degrees, about 45 minutes until toothpick is inserted in the center and comes out clean. Remove and cool.
For the glaze, whisk powdered sugar and lime juice together. Once poundcake is cooled, pour over the top. Cut and serve.
