Zucchini Bread

3 c. AP flour
3 eggs
1 c. vegetable oil
2 c. shredded zucchini
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon, allspice or Chinese 5 spice (which ever desired)
1/4 tsp salt
2 tsp vanilla
1 c. chopped walnuts (optional)

In a large bowl combine all the dry ingredients including flour, baking powder, baking soda, cinnamon (or which ever spice desired), and salt. In a separate bowl whisk together eggs, oil, vanilla, and shredded zucchini and nuts. Pour wet ingredients into dry and fold together with a spatula until well incorporated. Spray desired baking dish and line with parchment. Pour batter into pan and bake at 350 degrees and bake until outside is golden brown about 25-35 minutes. Center will come out clean when toothpick is inserted in center. Cool, slice and serve.
